With just a few ingredients, you can prepare dinner for the whole family and actually have time to spare.
The first time I cooked this roasted pork loin recipe, I expected us to eat at midnight. But the truth is, prep time only takes about 20-30 minutes (depending on how fast you can peel potatoes) and cooking time is less than 1 hour.
Without any further ado, here’s how to cook a quick and easy dinner, from scratch:

- First, mix 4-5 tablespoons of olive oil with the chopped garlic, rosemary needles, salt and pepper.
- Use this oily mixture to 'massage' the pork loin on all sides, then set the meat aside.
- While the meat 'rests', peel the potatoes and carrots and dice them all into cubes. Pour some olive oil on them (2-3 tablespoons should suffice), add salt, pepper, rosemary and garlic and set these aside as well.
- When you're ready to start dinner, place the meat in the oven first (without the vegetables).
- Bake at 350°F (180°C) for about 20 minutes, then take the roast out...
- ... and throw in the potatoes as well.
- Resume baking for another 30-40 minutes.
- Serve while still hot!
Recipe Notes
While in the oven, check on the meat and veggies to see if they didn't dry too much while cooking. If this happens, simply pour some oil from the tray on top of the meat & veggies, using a spoon.
