Looking to cook a super-fast meal? Try this one pot spicy cheesy pasta!
It’s delicious, it’s quick and – best of all – it’s really cheesy!
Whenever I find myself strapped for time, I often throw some pasta in a pot and come up with something quick to ‘match’ it with. Usually, it’s a creamy, quick to prepare sauce (and it usually involves lots of cheese!)
This recipe is particularly cheesy, since it has mozzarella cheese added to the sauce and grated parmesan as a bonus.
I often cook this for dinner, but you can very well serve it for lunch as well!

Ingredients
Pasta
- 2 cups pasta
- 1 pinch salt & pepper
- 1 teaspoon olive oil
Cheesy sauce
- 1 tablespoon butter
- 1 cup bacon (chopped)
- 3 cloves garlic (chopped)
- 1 cup sour cream
- 1 cup mozzarella cheese (shredded)
- Parmesan cheese (grated, for serving)

Instructions
Cooking the pasta:
- First, bring about 4 cups of water to boil. Add salt, pepper & olive oil, then add the pasta.
- Let it boil according to the instruction on the package (usually a few minutes), then drain it and set it aside.
Preparing the cheesy sauce:
- While the pasta boils, you can very well proceed to prepare the cheesy sauce.
- First, melt the butter into a large enough saucepan.
- Second, add the chopped garlic and bacon and fry them in butter. When fried on all sides, add the sour cream.
- Stir well, then add the shredded mozzarella and let the sauce boil until the cheese melts (keep stirring, it helps the cheesy sauce become homogeneous).
- Once the sauce is ready, add the boiled pasta into the saucepan, stir well and let it boil a couple more minutes.
- Serve hot with grated Parmesan on top!

PS: If you're not a fan of the spicy pasta, simply avoid adding the pepper.
