- 15 oz. liver (I used veal for the recipe)
- 1 onion
- 1 clove garlic
- 15 oz. butter
- 4 tbsp. sour cream
- 2 tbsp. olive oil
- salt & pepper

Instructions
- Heat up the oil and 2 tbsp. of butter and fry the garlic cut in half.
- Meanwhile, clean the liver by removing any connective tissue and green - yellowish parts (the gall), then dice it.
- When everything starts to fizzle, take the garlic out and toss in the onion and liver cut into pieces.
- Fry the liver on both parts for a couple minutes, then add a ladle of water and cook with the lid on until the liver softens.
- When ready, transfer everything into a food processor and blend. Add salt and pepper to taste, the rest of the butter and sour cream. Blend again until smooth.
- Serve on warm toast.
