First, boil the cauliflower: wash it, divide it into florets and boil in salted water for about 10-15 minutes (until it begins to soften).
Let it cool for a few minutes, then mash it with a fork.
Add the rest of the ingredients: grated cheese, raw egg, chopped garlic and breadcrumbs. Add salt and pepper to taste and begin mixing your ‘dough’ (I use my hands to prepare the mixture, but a hand mixer would also work)
Using your hands, form the meatballs and cover them in breadcrumbs.
Place each cauliflower meatball on a tray on baking paper and dribble some extra virgin olive oil on top.
Bake in the oven, at 400°F (or 200°C), until crisp. Bake for about 15 minutes on one side, then turn them over and bake for another 15 minutes on the other side.
