Veggies are important for a balanced diet and luckily, cauliflower is quite versatile when it comes to cooking it.
You can puree it, you can make cauliflower souffle and apparently, you can serve it in the form of meatballs. It’s actually a tasty and lighter alternative to the ones prepared with actual meat.
This is one of my favorite ways to serve cauliflower. Here’s how I prepare quick and tasty cauliflower meatballs.
First, boil the cauliflower: wash it, divide it into florets and boil in salted water for about 10-15 minutes (until it begins to soften).
Let it cool for a few minutes, then mash it with a fork.
Add the rest of the ingredients: grated cheese, raw egg, chopped garlic and breadcrumbs. Add salt and pepper to taste and begin mixing your 'dough' (I use my hands to prepare the mixture, but a hand mixer would also work)
Using your hands, form the meatballs and cover them in breadcrumbs.
Place each cauliflower meatball on a tray on baking paper and dribble some extra virgin olive oil on top.
Bake in the oven, at 400°F (or 200°C), until crisp. Bake for about 15 minutes on one side, then turn them over and bake for another 15 minutes on the other side.
