Happy holidays, with coconuts :D

I wish you all (those few readers i might have already lost…) a happy season with joy and lots of cookies.

I myself love cookies and cakes and everything related. Even if this year I can’t be with my whole family, i can still enjoy the making (and of course, eating) of a cookie I learned to bake from someone close.

It’s called cake with coconut frosting.

You need:cake with coconut frosting

for the dough:

250 g. sugar
250 g. flour
2 eggs
1 spoon of honey (optional)
100 ml. milk
baking powder

for the glazing:

200 g. sugar
200 g. butter
4 spoons od milk
4 spoons of cocoa
grated coconut

How to bake:
Dough: Mix the ingredients until you obtain a dough. Place it on a tray with baking paper and bake for 20 minutes (or less, if it’s done). Let the dough cool, then cut it in cubes.

Glazing:
Boil the ingredients until the sugar melts.

Roll the cubes through the cocoa glazing, then roll them in the coconut race.

Done :) Enjoy !

    Just thought I’d say that my two nieces came round last night and we made these using your recipe.

    They looked really good, sadly I wasn’t allowed any as they wanted to take them home for their mums. But I got to lick the spoon like I did when I was a kid! :)

    I sure hope you were with your kids when you made that. That’s too much for just one person and I wouldn’t eat that all by myself. But of course, it’s easier said than done. :)

    I’m not a huge fan of coconut. I don’t mind the occasional lamington but I usually steer clear of anything that looks ‘coconutty’. Still, I have to say that your cake looks darn tasty. I might even have to re-visit my opinion on coconut and give it another chance :) .

    It looks great. The only problem is that a don’t like chocolate. Everybody I tell this thinks I am crazy. But it’s true and it sometimes can be a problem when I have dinner at someone’s house and we have something with chocolate for desert.

    I used you recipe and I have to say it the tast is great. But I used 50 ml milk and 3 eggs
